Description: Artichokes likely evolved out of Northern Africa, and the name artichoke comes from the Arabic al-kharshof. Artichokes were eaten by the Egyptians, cultivated in Sicily when the Greeks occupied it, and eventually passed on to the Romans. Around 1500, the artichoke spread through most of western Europe. In the 1800s, artichokes arrived in the United States.
