Description: People may have been cultivating beets for nearly four thousand years. If you sat down for dinner in ancient Babylonia, there's a chance you would have been served this ancient vegetable, but it probably would have been a leafy variety (more like chard, which is part of the beet family). Today, the deep red beet root is popular, and often served in New York City restaurants. You might find beets served as a cooked vegetable, included in salads or pickled.
