Description: Also known as Chinese cabbage or snow cabbage, bok choy is originally from China and is still very closely associated with Chinese cooking, especially stir fries. The cabbage-like plant is also quite popular in Korean kimchi. By the 20th century, Japan and the rest of the world had discovered its culinary benefits as well as its high nutritional value - bok choy has a high calcium content, and it is rich in vitamins C and A. There are two distinct types of bok choy: the pekinensis group is also called Napa cabbage and has wide crinkly, light green leaves. The chinensis group comes in a smaller bunch with round dark green leaves meeting together in a celery-like white bulb.
