Season: July to September
Description: Early explorers introduced this vegetable to India and other parts of Asia over 10,000 years ago. The cucumber's popularity quickly grew not only for its refreshing taste, but also for its beauty and health benefits. The taste can be attributed to the fact that cucumbers are primarily composed of water, and the health benefits to its high contents of vitamin C, fiber, and caffeic acid. These ingredients make the cucumber excellent for your complexion. The cucumber ranges in color from green to white and typically does not get larger than nine inches. This vegetable can be enjoyed year round, but the harvest peaks during the summer months when everyone welcomes an extra way to cool down.
