Season: June to August
Description: Known to be the more delicate and sweet relative of the onion, leeks add subtle flavors to dishes without overpowering them. Leeks bear a strong resemblance to scallions, as they have a long green stalk with tightly wrapped leaves and a small bulb attached to the bottom. Leeks are a good source of iron and vitamin C, and studies have shown that they help reduce bad cholesterol levels. Leeks have been praised throughout history, and even Aristotle credited clear strong voices to a diet of leeks. The Romans are thought to have brought the vegetable to the United Kingdom where they flourished, due to their ability to grow in cold climates.
