Season: October to May
Description: Parsnips are closely related to carrots, with a stronger, sweet-earthy flavor. Colonists took parsnips to the New World for use in wines, breads, and stews.
Parsnips are high in potassium and folic acid. They taste best in the colder months. Select parsnips that feel hard and do not bend. You can keep parsnips for up to a week in your refrigerator.
Did you know? In the Middle Ages, babies used parsnips as pacifiers.
