Description: Popularized by the French king Louis XIV in the 17th century, peas became an item held in high regard, but their history dates back much further than that. Peas are mentioned in the Bible and were also consumed in Asia as far back as 2000 BC. Peas are members of the legume family and are rich in vitamins K and C, as well as dietary fiber. Only 5% of peas grown are sold fresh, and when looking for the best of the fresh ones you should look for peas whose pods are firm and smooth.
