Description: Technically a vegetable, rhubarb is well known for its appearances in pies and other sweets. Though often depicted as a deep red, the stalks can also be pink and green. The Chinese have been using rhubarb medicinally for thousands of years. Because it’s a perennial vegetable, a rhubarb plant can be productive for 5 years or more.
Make sure to look for stalks that are firm; discard the leaves before wrapping the stalks in plastic and storing them in the refrigerator.
