Description: Originating from the Mediterreanean, Salsify is a flowering plant member of the Asteraceae family. The vegetable we know as salsify refers to the root of the purple salsify. Salsify roots grow between 8-12 inches long; the roots can be stored in your refrigerator for up to a week.
Salsify is an excellent source of dietary fiber. Salsify can be eaten as a cooked vegetable or in soups and savory pies.
Did you know? Salsify has been called an ‘oyster plant’, due to its taste.
