Description: Zucchini is a member of the summer squash family; summer squash is native to Mexico. The Zucchini variety of squash was developed in Italy; the first zucchini in America is recorded around the 1920s, most likely brought over by Italian immigrants. Zucchini can come in green yellow, or even white, and every part of it is edible.
When choosing a zucchini, look for one with shiny, tight skin, yet delicate enough for you to push with your finger.
Did you know? If zucchini are left to grow for too long, their skin becomes tough and their taste becomes bland.
